A staple of Jamaican and Caribbean cuisine, “jerk” refers to a dry rub or wet marinade made of allspice and scotch bonnet peppers with other seasonings like cloves, garlic, brown sugar, soy sauce and vinegar. The technique of cooking with jerk spice is called — wouldn't you know — jerking.
